    New Years Recipes: Whole Wheat Blueberry Lemon Pancakes

    After the holidays, you may be feeling inspired to eat healthier. If your New Year's resolution involves being healthy in any way, we want to help you out this year. Try these pancakes for your Saturday morning breakfast this weekend.

    Ingredients

    • 3/4 cup all-purpose flour
    • 3/4 cup whole wheat flour
    • 1 tablespoon baking powder
    • 2 tablespoons sugar
    • Zest of 1 lemon
    • 1/2 teaspoon salt
    • 1 large egg
    • 2 tablespoons vegetable oil
    • 1 cup milk
    • 2 tablespoons freshly squeezed lemon juice (optional)
    • 8 ounces fresh blueberries

    Directions

    1. In a large mixing bowl, whisk together flours, baking powder, sugar, lemon zest, and salt. Make a well in the center of the dry ingredients and add in the egg, milk, oil, and lemon juice. Whisk together until they it is just combined. Fold in the blueberries with a spatula until they are mixed thoroughly.
    2. Heat and grease a griddle or skillet. Pour 1/4 cup batter onto the pan and cook until tiny bubbles form on the top, flip and cook for an additional minute or two until both sides are brown. Serve hot and enjoy!

    Ingredients

    • 2 cups rolled oats
    • 2 cups non-dairy milk
    • 1/3 cup pur maple syrup
    • 3 tbsp chia seeds
    • 1 tsp ground cinnamon
    • 2 small bananas, peeled & chopped
    • 1-1.5 cups fresh blueberries
    • 1/2 cup chopped walnuts
    • pinch of salt
    • 1 tsp vanilla
    • granola for garnish

    Directions

    1. Mix in a casserole dish and place in fridge overnight. In the morning, give it a stire and enjoy cold with a sprinkle of granola on top. Stays fresh for 2-3 days in fridge.

    12 Days of Blueberry Pastries : Overnight Blueberry French Toast

We thought you’d enjoy preparing this overnight and have an easy breakfast in the morning. Enjoy this amazing holiday! We hope these recipes brought some holiday cheer into your life!

     

    Ingredients

    • 12 slices day-old bread, cut into 1-inch cubes
    • 2 (8 ounce) packages cream cheese, cut into 1 inch cubes
    • 1 cup fresh blueberries
    • 12 eggs, beaten
    • 2 cups milk
    • 1 teaspoon vanilla extract
    • 1/3 cup maple syrup
    • 1 cup white sugar
    • 2 tablespoons cornstarch
    • 1 cup water
    • 1 cup fresh blueberries
    • 1 tablespoon butter

    Directions

    1. Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
    2. In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
    3. Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
    4. Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
    5. In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

    12 Days of Blueberry Pastries : Almond Blueberry Cookies

    It’s the day before Christmas! These Almond Blueberry Cookies are sure to have Santa smiling when he visits tonight!

    Ingredients

    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 stick (1/2 cup) unsalted butter
    • 1 cup sugar
    • 1 egg yolk
    • 1/4 to 1/3 cup whole milk
    • 1 teaspoon almond extract
    • 2 teaspoons lemon zest, about 1 lemon
    • 1/2 cup chopped almonds, toasted
    • 1 cup frozen blueberries, thawed and drained

    Directions

    1. In a medium bowl, combine flour, baking powder, and salt.
    2. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. Add milk, almond extract, and lemon zest.
    3. Stir the dry ingredients into the wet ingredients. Fold in the almonds, then the blueberries. Chill the dough in the refrigerator for 30 minutes.
    4. Preheat the oven to 375 degrees F.
    5. Using two small spoons, dollop mix onto cookie sheets. Bake until golden brown around the edges, about 15 minutes.
    6. Cool the cookies on a wire rack. Save in a storage container to take to the picnic.
